Eleven Madison Park Goes Vegan: World’s Best Restaurant Reopens June 10

A year ago, Daniel Humm was unsure if his restaurant Eleven Madison Park would ever reopen.

Now, the chef and owner of one of the World’s Best Restaurants has announced a bold new direction for his dining room. On June 10, EMP will re-open its doors as a plant-based restaurant. Gone will be dishes like his famous honey lavender roasted duck. Instead, he’ll offer a beet that’s been roasted for 16 hours, then presented in a clay vase that gets cracked open at the table. Also on the menu: peas with almond cream and pea-miso puree.

Eleven Madison Park, one of the world’s best restaurants, is going vegan

The three-Michelin-starred New York restaurant will be going completely plant-based when it reopens next month, it announced Monday — becoming one of the most high-profile restaurants to do so.

“I’m excited to share that we’ve made the decision to serve a plant-based menu in which we do not use any animal products — every dish is made from vegetables, both from the earth and the sea, as well as fruits, legumes, fungi, grains, and so much more,” chef and owner Daniel Humm wrote in a statement on the restaurant’s website.

“We had been brainstorming different ways to make the restaurant part of the community and get staff engaged beyond making meals and pushing them out of the door,” says Matt Jozwiak, co-founder and chiefs executive officer of Rethink. “And then Daniel called me and was, like, ‘Let’s do a food truck.’
